Refried Beans

Frijoles Refritos

1/4 cup oil or bacon drippings
1 small onion, chopped
3 cloves garlic, minced
3 cups cooked pinto or black beans, plus 1 cup of cooking liquid
Salt to taste
Optional- grated Monterey jack or cheddar cheese

Heat oil in skillet, add onion and garlic and fry until soften, about 3 minutes. Add the beans and mash with potatoe masher while stirring in a little bean liquid at a time. Continue mashing and stirring and add enough liquid to reach a smooth consistency. Season with salt.

You can sprinkle a little cheese on top.
