Jalapeno-Sweet Potato Pancakes |
1 large sweet potato or yam, peeled and grated 2 jalapeno peppers, stemmed, seeded and finely minced 3 green onions, finely chopped 1/3 cup flour 1/4 teaspoon cinnamon 1/2 teaspoon salt 1/2 teaspoon freshly ground pepper 2 eggs beaten 1/4 cup Oil for frying |

Mix all ingredients except oil. Put two tablespoons of oil in heavy skillet over medium heat. When hot, drop batter by scant 1/4 cups full onto hot oil. Press with spoon to flatten into a round cake about 3 inches wide. Cook until golden brown, turning once or twice. Cook in batches and drain on paper towels. Add more oil as needed to prevent sticking. |
