3 strips bacon cut in pieces 1 cups fresh corn, cut off cob or 1 pack frozen corn 1 small, chopped, onion 2 lb. fresh calabacitas (a Mexican squash similiar to zucchini) or zucchini 1/2 cup diced fresh, or frozen and thawed green chile Salt and Pepper |

Fry bacon till crisp. Set aside. Pour off most of fat, add onion, corn, and chile and cook for 5 minutes. Then add squash. Cover and simmer until squash is done. Approximately 10 minutes. Season to taste with salt and pepper. Garnish with crumbled bacon. |
