Calabacitas

3 strips bacon  cut in pieces 
1 cups fresh corn, cut off cob or 1 pack frozen corn 
1 small, chopped, onion 
2 lb. fresh calabacitas (a Mexican squash similiar to zucchini) or zucchini  
1/2 cup diced fresh, or frozen and thawed green chile
Salt and Pepper

Fry bacon till crisp. Set aside. Pour off most of fat, add onion, corn, and chile and cook for 5 minutes.

Then add squash. Cover and simmer until squash is done. Approximately 10 minutes. Season to taste with salt and pepper.

Garnish with crumbled bacon.
