Salsa Fresca (fresh salsa) Red ripe tomatoes are a must for this sauce. When you buy roma tomatoes at the store, do not refrigerate, but leave out on the counter or window sill, and they will continue to ripen. |
4 ripe Roma tomatoes 3 Serrano chilies,minced 1 clove garlic, minced 1/2 small onion, chopped 1 tablespoon oil 1/2 teaspoon salt 1 tablespoon cider vinegar or freshly squeezed lime juice |

Plunge tomatoes into boiling water to loosen skin. Remove from hot water and run cold water over tomatoes to cool. Core tomatoes and remove skins, then roughly dice. For less heat, remove seeds from serranos before mincing. Put all ingredients in food processor or blender and process briefly. Let stand in refrigerator 1/2 hour before serving. Makes 1 1/2 cups You can make the same sauce with fresh jalapeno peppers. |
