PAT'S FIESTA SALAD

1 T. Dijon mustard 
1 T. honey* 
1/3 cup balsamic vinegar 
1/4 cup extra-virgin olive oil or salad oil 
Salt and pepper to taste 
1 can black beans, rinsed in strainer 
1 can black-eye peas, drained 
1 can whole kernel corn, drained 
1/2 diced medium red bell pepper 
3 scallions (bottoms) finely sliced 
2 jalapeno peppers, chopped fine 
Tabasco or other hot sauce to taste

Whisk dressing ingredients.

Comine with all other ingredients.

Serve at room temperature. Best if made a day ahead.

*Substitute sugar to taste. Sugar is not as sweet as honey, so you'll need more than 1 tablespoon.
