Dressing: 1 ripe black skinned avocado, peeled and pitted 2 green onions, chopped 1/4 cup mayonaise 2 tablespoons lemon or lime juice 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 3/4 cup buttermilk 1 head iceberg lettuce cut into quarter wedges |

Place a wedge of lettuce on each salad plate. Spoon dressing over wedge. Garnish with more chopped green onions. Makes four servings. |
