Lettuce Wedges with Avocado Buttermilk Dressing

This salad goes with all Mexican Dishes.

Dressing:
1 ripe black skinned avocado, peeled and pitted
2 green onions, chopped
1/4 cup mayonaise
2 tablespoons lemon or lime juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3/4 cup buttermilk

1 head iceberg lettuce cut into quarter wedges

To make dressing, combine all ingredients except buttermilk in food processor or blender, process until smooth, add buttermilk and process until combined. Place in covered container and chill in refrigetator for several hours before serving.

Place a wedge of lettuce on each salad plate. Spoon dressing over wedge. Garnish with more chopped green onions. Makes four servings.
