Black Bean and Rice Salad

    2 cups cooked or canned black beans, rinsed 
      and drained.
    2 cups cooked white rice 
    1 cup chopped fresh cilantro
    1/2 cup chopped onion
    1/2 cup chopped celery 
    1 fresh jalapeno pepper, finely minced 
    1/4 cup fresh lime juice
    3/4 cup olive oil 
    1 clove chopped garlic 
                  

In a bowl mix together the beans, rice, onion, jalapeno, cilantro and celery. Place the lime juice in a small bowl and whisk in the oil. Add the onion and garlic. Pourthe oil mixture over the bean mixture and toss lightly. Salt and pepper to taste.
