Arroz Rojo (Red Rice) |
1 1/2 cups long grain rice 1 garlic clove 3/4 teaspoon salt 3 tablespoons vegetable oil 1/2 medium onion, finely chopped 1 (8oz.) can tomato sauce 2 cups chicken broth |

Place rice in bowl of hot water and let soak for 15 minutes. Drain rice in sieve and run cold water over rice until the water is runs clear. Let rice drain about 10 minutes. Mash garlic with the salt to make a paste. Heat the oil in a heavy skillet. When hot, add the rice and cook and stir over medium heat until the rice is lightly browned. Add the onion and garlic paste and cook until the onion is tender. Stir in tomato sauce and chicken broth. Cover and simmer until most of the liquid
is absorbed. Reduce the heat to very low and steam about
20 minutes until rice is tender. Makes 6 servings |
