Green Chicken

(Pollo Verde)

1 large onion, coarsely chopped
1 clove garlic, peeled
1 small can Salsa Verde (Herdez Brand)
1/2 cup chopped parsley
1 teaspoon salt
1/2 teaspoon pepper
1 frying chicken, cut in pieces
3 tablespoons oil

Put onion, garlic, salsa verde and parsley into a blender or food processor. Blend until liquefied. Stir in salt and pepper.

Heat oil in skillet and brown chicken pieces on all sides. Arrange chicken pieces in baking dish. Pour green sauce over the chicken and put cover dish with foil. Bake in 375 F oven for 30 minutes. Remove foil and bake another fifteen minutes, basting the chicken often. Remove from oven and let stand 5 minutes before serving.

Serve with saffron rice and fried plantains.
