1/4 pound Crab meat 1 8 oz package cream cheese 1 package corn muffin mix 24 large fresh Jalapenos Ranch dressing oil for deep frying |

Remove stems and seeds from Jalapenos, blanch peppers in lightly salted water rinse and drain well. Blend Crab meat and cream cheese to a smooth paste, spoon into peppers and refridgerate 2-3 hours. Prepare corn bread mix according to package directions, adding just enough extra water to make a smooth, thick batter. Dip chilled peppers into the batter and deep fry in hot oil until lightly brown, drain on paper towels. Serve with Ranch dressing for dipping. |
