Black Beans - Cuban Style

1 pound black beans
1/4 cup sugar
1/2 cup oilive oil
7 cloves garlic, peeled and finely chopped
1 onion chopped
1 green pepper chopped
2 bay leaves
1 tablespoon salt
1 teaspoon cumin
1/2 teaspoon white pepper
1/2 teaspoon dried oregano
Cilantro (optional)

Wash, pick over and soak the beans overnight in enough water to cover, plus 2 inches.

Drain and rinse beans. Then simmer partially covered with lid in 8 cups water. Cook for about 2 hours until beans are soft, not mushy.

Make a simple sugar syrup by boiling sugar with 1/2 cup water until sugar is disolved. Set aside.

Heat olive oil in a large frying pan and saute garlic and onion until wilted. Add green pepper, bay leaves, salt and spices and cook until green pepper begins to soften.

Drain the black beans and add to vegetables along with 1/4 cup of the sugar syrup. Cook together for about 5 minutes. Garnish with cilantro.
