Mexican Turkey Bake

1 cup Uncle Ben's Converted Rice 
1 can (about 3 0z) mild green chilies, drained and chopped 
3 cups cooked turkey, chopped 
1 12-oz can Mexican - style corn with sweet peppers drained 
1 10-oz can enchilada sauce 
3/4 tsp salt 
1 cup dairy sour cream

Prepare rice according to package directions. Reserve 1 Tbs chilies for garnish. Combine remaining chilies, turkey, corn, enchilada sauce, salt, and cooked rice in a large bowl. Spoon into greased baking dish 12" x 7 1/2" x 2".

Cover and bake at 350 degrees, for about 25 minutes, or until hot.

Spoon sour cream down center, garnish with reserved chilies. Makes 6 servings
