Scrambled Eggs with Cactus

3/4 cup cactus strips, drained, rinsed and chopped
1/4 cup finely minced onion
2 tablespoons butter
4 or 5 eggs, lightly beaten
salt and pepper to taste

Melt butter in skillet, add cactus and onion and cook until onion is soft about 5 minutes.

Add the beaten eggs and season with salt and pepper. Gently stir to combine. Cook until eggs are firm, but still moist 3 or 4 minutes.

Serve with salsa

Makes 3 or 4 servings.
