Sponge Cake (used as base in many Mexican desserts) |
1 1/4 cup flour 1/2 cup sugar 7 egg yolks 6 egg whites 4 tablespoons butter |

Beat together until stiff, the 7 egg yolk, 1 egg white and the sugar. In a separate, very clean glass bowl, beat the remaining egg whites until stiff. Gradually add the sifted flour to the yolks, then fold in the egg whites, then add the melted butter. Empty the batter into a greased and floured loaf pan and bake in a 375 degree oven. When the cake has risen, swiftly make a lenghtwise cut across the top. Continue baking until done. |
