Bunuelos (A Christmas Tradition) |
4 cups all-purpose flour 2 tablespoons sugar 1 teaspoon baking powder 1 teaspoon salt 2 eggs, well beaten 3/4 to 1 cup milk 1/4 cup melted butter Oil for deep frying, heated to 350 degrees Cinnamon and Sugar Mixed or sifted powdered sugar |

Mix flour with sugar, baking powder and salt in a bowl. Combine beaten eggs and 3/4 cups of the milk. Stir into the dry ingredients to make a stiff dough, adding more milk if needed. Stir in the melted butter. Turn dough out on lightly floured board and knead 1 to 2 minutes. Roll out 1/8 inch thick on lightly floured board and cut into 3 inch squares. Or use cookie cutters to cut into shapes. Fry in deep fat at 350 degrees until delicately browned, turning to fry on other side. Drain on paper towels. Dust with the cinnamon and sugar mixture or with powdered sugar Makes 3 dozen bunuelos. Bunuelos are served to the visitors during the "Las Posados", the nightly candlelight processions that start on Dec.16 and continue for 9 nights. The processions visits three houses, each time asking for room to stay, just as Joseph and Mary did in Bethlehem. The first two house will refuse the group entry, but the third house will invite them to have a party complete with pinata.
